Levitating Sour

Ingredients

50ml Poltergeist

20ml lime juice

15ml lavender & honey syrup

3 sage leaves

Egg white

Garnish with edible flowers

Our flagship cocktail has been carefully crafter by our expert mixology team for your own enjoyment. This rich, citrussy cocktail is one of our favourites and a perfect way to start an evening with guests.

The Method

  1. Chill down a coupette glass with ice.
  2. Add the sage leaves to your shaking tin and lightly bruise with a muddler.
  3. Add the Poltergeist, lime juice & lavender and honey syrup to your shaker.
  4. Add the egg white and 1 cube of ice, then shake vigorously for 10-15 seconds to whisk up the egg white.
  5. Fill up the shaker with ice and shake again for around 10 seconds.
  6. Discard ice and melted water from the coupette glass then double strain the contents of the shaker into it.
  7. Garnish with edible flowers of your choice.
